Here are some of my favorite recipes from my cooking class. I usually am not a fan of seafood, but this fish was delicious! P.S. This was a microwave lab so you don't have to cook everything in a microwave. It was to show us it can be done. So I think it would taste better if you don't cook the fish in the microwave although it still tasted good.
Scalloped Fish
1 lb. white fish fillets
½ cup butter
1 cup soft bread crumbs
1 cup saltine cracker crumbs
1 teaspoon salt
1/8 teaspoon freshly ground pepper
1/3 cup milk or cream
1. On microwave-safe platter or 9 inch nonmetal pie plate, place fish fillets with thickest areas to outside edges of dish. Cover with dampened paper towel which has most of water squeezed out. Microwave at High power for 4 minutes.
2. Remove platter from microwave and let stand covered with paper towel while preparing buttered crumbs.
3. In 1 quart glass measuring cup, place butter. Microwave at High power 1 minute or until melted. Add bread and cracker crumbs. Mix with fork.
4. Remove paper towel from fish and sprinkle evenly with salt and pepper, then butter crumbs. Pour milk evenly over top. Microwave at High power 2-4 minutes more.
Cheese Stuffed Manicotti
14 manicotti (1 8-oz. package)
3 oz. mozzarella cheese (cubed)
1 1/2 cups (15 oz. container) ricotta cheese
2 cups shredded Mozzarella cheese
1/2 cup shredded Parmesan cheese
½ cup frozen spinach (1 box), thawed and squeezed dry.
¼ teaspoon garlic powder
¼ teaspoon salt
1/8 teaspoon pepper
2 can2 (15 oz.) diced tomatoes
¼ Marjoram
1 teaspoon Italian Seasoning
¼ teaspoon garlic salt
1/8 teaspoon freshly ground pepper
1. Brush manicotti with oil and then cover with half the water needed for boiling. Cover with plastic wrap. Cook manicotti in 13x8x2 dish on High for 22-25 minutes, turning over with a fork every 5 minutes.
2. Dice cheese into ½ inch chunks before separating slices. Reserve about 1/3 cup for topping. Combine rest of mozzarella with ricotta, romano, spinach, garlic, salt, and pepper. Stuff cooked manicotti with cheese filling. Arrange in greased 13x8x2 inch dish.
3. Mix tomatos, marjoram, Italian Seasoning, garlic salt and pepper. Pour sauce mixture over top of manicotti. Sprinkle with cheese. Cover with wax paper. Microwave at high power for 15-18 minutes. Rotate dish halfway through cooking.
